The Tashkent Plov Center is a legendary open-air dining venue north of the Old Town where enormous quantities of Uzbekistan's national dish — plov (rice pilaf with lamb, carrots, and chickpeas) — are prepared daily in giant kazan cauldrons over open fires.
The plov center evolved from an informal gathering of plov masters into an organized dining venue. Plov is considered Uzbekistan's national dish and is traditionally prepared by men (oshpaz). Each region has its own recipe — the Tashkent version features yellow carrots, chickpeas, and lamb.
