A self-guided pintxo crawl through the Parte Vieja is the quintessential San Sebastián experience. With over 50 bars in a few blocks, the tradition is to eat one or two pintxos per bar, accompanied by a txakoli or zurito, then move to the next.
Pintxo culture emerged in the 1940s–50s in the Parte Vieja. The term comes from the Spanish pinchar (to spike), referring to the toothpick holding ingredients together. Three Michelin three-star restaurants elevate the city's culinary fame, but the pintxos bars remain its soul.
