Overview
Brasserie Cantillon is one of the last traditional lambic breweries in Brussels, producing spontaneously fermented beers using wild yeast since 1900. A self-guided tour walks visitors through the unchanged brewing process.
Highlights
- Coolship: The large, open copper vessel where hot wort is exposed to ambient air and wild yeast overnight.
- Oak Barrels: Centuries of fermentation in old oak and chestnut casks.
- Tasting: Two beers included — classic Gueuze and a seasonal fruit lambic.
History
Founded by Paul Cantillon in 1900. The family has maintained the same natural brewing techniques for over 120 years. Lambic brewing is recognised by UNESCO.
